Memorial Day Menu - A New Twist To Your Old Favorites

SALAD

DIRECTIONS

Step One - Boil your eggs

Step Two - In a jar shake together vinegar, mustard, and oil and season with salt and pepper.

Step Three - Prep the topping by cutting the hard-boiled eggs, chicken, avocado, and tomatoes.

Step Four - On a large platter spread out lettuce, then add rows of sliced hard-boiled egg, chicken, bacon, avocado, blue cheese, and cherry tomatoes.

Step Five - Season with salt and pepper.

Step Six - Drizzle homemade dressing and garnish the salad with chives.

INGREDIENTS

1/3 c. red wine vinegar
1 tbsp. Dijon mustard
2/3 c. olive oil
kosher salt
Freshly ground black pepper
1 head romaine lettuce, coarsely chopped
4 hard-boiled eggs, peeled and quartered
12 oz. cooked chicken, diced
8 slices bacon, cooked and crumbled
1 avocado, thinly sliced
4 oz. crumbled blue cheese
5 oz. cherry tomatoes, halved
2 tbsp. Chopped chives

Shrimp Salad Stuffed Avocados

INGREDIENTS 


2 avocados, pitted
2 tbsp. Extra virgin olive oil
1/2 lb. raw, de-veined shrimp (fresh or frozen)
1 c. cherry tomatoes, halved
1/2 c. corn (fresh, frozen, or canned)
1/4 c. Greek yogurt
Juice of 1 lemon
kosher salt
Freshly ground black pepper
Basil, for garnish

DIRECTIONS

Step One - Scoop out avocados, leaving a small border. Dice avocado and set aside.

Step Two - In a skillet over medium-high heat, heat olive oil. Add shrimp and sauté until fully cooked. This will take 5 - 7 minutes. 

Step Three - Set shrimp aside to cool for 5 minutes, then chop into bite-size pieces.

Step Four - In a large bowl, toss diced avocado with shrimp, tomatoes, corn, Greek yogurt, and lemon juice. 

Step Five - Season mixture with salt and pepper.

Step Six - Divide salad among avocado halves. 

Step Seven - Garnish with basil

 Pesto Shrimp Skewers with Cauliflower Mash

DIRECTIONS

Cauliflower Mash:

Step One - Fill an 8-quart pot with cool water and cauliflower florets. Cover pot and bring to a boil. Season with salt and simmer until tender, this will take 16 to 18 minutes. (Smaller florets will speed up this step.)

Step Two - Drain cauliflower in a colander and transfer back to pot over medium heat. Add garlic, white wine, and 1 cup water, and season with salt. Stir and cover pot, then simmer for 5 minutes. 

Step Three - Turn off heat and add cream.

Step Four -  Smash the cauliflower with a potato masher until smooth.

Step Five - Fold in Parmesan and butter just before serving.

Shrimp:

Step One - Preheat grill or pan to medium-high. 

Step Two - Place shrimp onto skewers. 

Step Three - Drizzle shrimp with olive oil and season with salt and pepper.

Step Four - Grill shrimp until lightly charred, 2 to 3 minutes on each side.

Step Five - Serve shrimp skewers over a bed of cauliflower mash. 

Step Six - Drizzle pesto over shrimp and garnish with fresh basil

INGREDIENTS 

1 large head cauliflower, cut into small florets
kosher salt
1 clove garlic, grated
1/2 c. white wine
1/2 c. heavy cream
1/4 c. freshly grated Parmesan
3 tbsp. butter
1 lb. extra-large shrimp, peeled and deveined
bamboo skewers, soaked in water
Extra-virgin olive oil, for drizzling
Freshly ground black pepper
1 c. pesto
1/4 c. chopped fresh basil

 Italian Chicken Skewers

DIRECTIONS

Step One - Season chicken with salt and pepper. 

Step Two - Create a marinade by mixing tomato paste, olive oil, garlic cloves, and chopped parsley in large bowl. 

Step Three - Add chicken to the large bowl. Be sure to toss the chicken in the marinade to fully coat it. 

Step Four - Refrigerate for 30 minutes.

Step Five - Preheat grill to medium-high. 

Step Six - Skewer chicken and bread. 

Step Seven - Drizzle with olive oil and season with salt and pepper.

Step Eight - Grill the kebobs until the chicken is cooked throughout and the bread slightly charred. Turn the kebabs occasionally. This process will take about 10 minutes. 

Step Nine - Garnish with parsley.

INGREDIENTS

1 lb. boneless skinless chicken breasts, cut into large cubes
kosher salt
Freshly ground black pepper
2 tbsp. tomato paste
1/4 c. extra-virgin olive oil, plus more for drizzling
3 garlic cloves, minced
1 tbsp. chopped fresh Italian parsley, plus more leaves for garnish
8 skewers, soaked in water for 20 minutes
1 baguette French bread, cut into cubes
 


HOT DOGS

DIRECTIONS

Step One - Flatten hot dog buns with a rolling pin. 

Step Two - In a small bowl stir together butter, garlic powder, and onion powder. Spread the mixture all over the bottom side of buns.

Step Three - In a large skillet over medium heat, sear hot dogs (work in batches if necessary) until charred, 2 minutes per side. Set hot dogs aside.

Step Four - Place bun, buttered side down, in skillet and top with 1/2 cup cheddar. 

Step Five - Top with a hot dog and sprinkle a little more cheddar and green onions.

Step Six - Cover with a lid to allow the cheese melt, then use a spatula to close the bun.

Step Seven - Place hot dogs on a platter to serve.

INGREDIENTS    

4 hot dog buns
2 tbsp. butter, softened
1/4 tsp. garlic powder
1/4 tsp. onion powder
4 hot dogs, sliced lengthwise
3 c. shredded Cheddar
Sliced green onions, for garnish

DIRECTIONS

Step One - Separate crescent dough into triangles.

Step Two -  Spread a thin layer of mustard over each piece of dough then place a hot dog on top. 

Step Three - Roll the dough around the hot dog, and skewer each dog.

Step Four - Cook over a campfire until the croissant is golden and fully cooked. This step will take 10 to 15 minutes.

Step Five - Place on a platter to serve.

INGREDIENTS

1 can crescent dough
2 tbsp. mustard
8 hot dogs


DESSERT

 Banana Split Kebabs

DIRECTIONS

Step One - Place two slices each of banana, pineapple, and strawberry onto a skewer. 

Step Two - Repeat process to assemble 23 more skewers. 

Step Three - Place all skewers on a  parchment-lined baking sheet.

Step Four - In a microwave-safe bowl melt chocolate in 30-second intervals, stirring in between. Repeat until the chocolate is smooth.

Step Five - Drizzle chocolate over fruit kebabs. Top it off with chopped peanuts. Freeze until ready to serve.

INGREDIENTS

2 bananas, cut into 1" pieces
24 1" pieces pineapple
12 large strawberries, rinsed, dried, and halved
2 c. chocolate chips
1/2 c. peanuts, chopped

 S’mores Krispie

DIRECTIONS

Step One: Grease a 9"-x-13" pan with butter.

Step Two - In a large pot over medium-low heat, heat butter until melted. Step Three - Add all but 1 cup of mini marshmallows and stir until melted and smooth.

Step Four - Turn the heat off and quickly stir in Golden Grahams until evenly coated. 

Step Five - Press chocolate pieces into the mixture and add the remaining cup mini marshmallows.

Step Six - Heat broiler, and cook for 2 minutes. 

Step Seven - Let it sit at least 30 minutes, slice, and serve.

3 tbsp. butter
1 package mini marshmallows
7 c. Golden Grahams cereal
3 Hershey's milk chocolate bars, broken into pieces
