It is finally getting warmer, and the BBQ invites have been sent out. This summer try bringing something new to the cookout, instead of the same old casserole or variations of salads. An easy and delicious dish to try is oven baked pesto chicken.
This dish will have everyone talking! At Fluff, we love to try different, healthy dishes from all over the world. The oven baked pesto chicken recipe is easy to make, low carb, low-glycemic, and diet friendly.
First Step: Preparing The Chicken
First, we begin with trimmed, sliced chicken breast. Make sure to cut off the fat and cut the chicken breast into thick strips. Season the chicken to your liking with black pepper, salt, and of your other favorite chicken seasons. Pre-heat your oven to 350 degrees.
Second Step: Making The Pesto
Now, you can always use store-bought pesto, which tastes great. But it's better to make fresh pesto at home. All you will need is the following:
2 Cups of Fresh Basil (This brings freshness to the dish.)
3 Cloves of Garlic
3/4th Cup of Your Choice of Grated Cheese
½ Cup of Pine Nuts Or Walnuts. (If you are allergic to nuts skip this step. The pine nuts are used to add a smoky taste.)
½ Cup of Olive Oil
Salt To Taste
Third Step: Combinding & Cooking The Dish
Next, we take a large casserole dish and spray non-stick spray in the pan. Add the pesto to the pan completely covering it. Place the chicken in the casserole dish, adding a little more pesto on top. Be mindful of how much pesto you use. Too much can be over-bearing.
Finally, cover the dish in foil and bake for 18 to 20 minutes. Once the chicken has finish cooking, remove the pan from the oven to add cheese. Put it back in the oven for 2 to 3 minutes to allow the cheese to melt. And voila! You are finished. This recipe takes about 35 minutes to complete.
